These delicious blueberry pupcakes are the perfect special treat for the dog in your life!
Pupcake Ingredients:
- 1 1/4 cup whole wheat flour
- 2 teaspoons baking powder
- 1/4 cup unrefined extra virgin coconut oil, melted
- 1/2 cup greek yogurt
- 2 eggs
- 1/2 cup blueberries
Frosting Ingredients:
- 8 ounces cream cheese
- 1 tablespoon natural maple syrup (optional)
- 1/2 cup blueberries
Pupcake Instructions:
- preheat oven to 350
- line cupcake pan with liners
- place whole wheat flour, baking powder, coconut oil and greek yogurt in a bowl and mix until well combined
- add eggs 1 at a time, mix well
- fold in blueberries
- spoon batter into liners
- bake 15-18 minutes
- allow to cool completely before frosting
Frosting Instructions:
- place cream cheese in a bowl and beat on high until smooth with an electric mixer
- add maple syrup (optional)
- add blueberries
- beat on high until the blueberries are incorporated into the frosting
- pipe or spread frosting on to each pupcake
