These yummy cookies contain loads of great healthy ingredients!
Oatmeal- is a great source of soluble fiber
Bananas- potassium
Carrots- beta carotene and antioxidant properties
Coconut Oil- for healthy coat and skin
Parsley- promotes fresh breath and aids in digestion
Ingredients:
- 1 cup whole wheat flour
- 1 cup quick cooking oatmeal
- 1 banana
- 2 carrots, shredded
- 2 tablespoons unrefined extra virgin coconut oil
- 1 tablespoon chopped parsley
- 1 egg
Instructions:
- preheat oven to 350
- puree banana until smooth
- combine all ingredients until well combined into a dough
- roll out dough on to floured surface to 1/4” to 1/2” thickness
- cut out desired shapes
- place cookies on greased or parchment lined baking sheet and bake for 30 minutes
- after the 30 minutes, you can remove cookies from oven for a slightly soft cookie, or for a crunchier cookie turn off oven after the 30 minutes, crack door and allow cookies to remain in oven for an additional 20 minutes (oven times may vary)
- store in airtight container in refrigerator for a week or freeze for up to 3 months
