Banana Carrot Cookies

These yummy cookies contain loads of great healthy ingredients!

Oatmeal- is a great source of soluble fiber

Bananas- potassium

Carrots-  beta carotene and antioxidant properties

Coconut Oil- for healthy coat and skin

Parsley- promotes fresh breath and aids in digestion

Ingredients:

  •  1 cup whole wheat flour
  • 1 cup quick cooking oatmeal
  • 1 banana
  • 2 carrots, shredded
  • 2 tablespoons unrefined extra virgin coconut oil
  • 1 tablespoon chopped parsley
  • 1 egg

Instructions:

  • preheat oven to 350
  • puree banana until smooth
  • combine all ingredients until well combined into a dough
  • roll out dough on to floured surface to 1/4” to 1/2” thickness
  • cut out desired shapes
  • place cookies on greased or parchment lined baking sheet and bake for 30 minutes
  • after the 30 minutes, you can remove cookies from oven for a slightly soft cookie, or for a crunchier cookie turn off oven after the 30 minutes, crack door and allow cookies to remain in oven for an additional 20 minutes (oven times may vary)
  • store in airtight container in refrigerator for a week or freeze for up to 3 months
